It had been way too long since I last made a batch of granola. I’m totally in love with the Primrose’s ones, but they’re really expensive…
So, I decided to make some again!
Wanted to make it a bit more seasonal by using rhubarb and it worked sooo well!
You can’t taste the rhubarb that much, but it gives an amazing texture to the granola without using any oil 😊
I’ll definitely try to make it with apple compote too, as I’m sure it would work as well!
Make a rhubarb compote the way you like it! Juste make sure there aren’t any big chunks in it 😉
- 1 cup oats
- ½ cup puffed rice
- 1 cup puffed oats
- ¼ cup buckwheat groats
- 2 tbsps maple syrup
- 3 tbsps rhubarb compote
- As many sultanas as you want (mine were from https://palmyradelights.ch/fr/)
Mix everything (except for the sultanas) with your hands until well coated.
Put in the oven at 180c. for approx. 25 min.
Let the granola cool and add the sultanas.
Keep it in a jar for 2-3 weeks and eat it as a snack, for breakfast or to top your nicecreams/smoothie bowls (But most of it will be eaten as soon as you get it out of the oven. Trust me 😉)
